Duchesse potatoes are basically mashed potatoes with different seasonings of your choice. The potatoes are normally boiled and mashed with the seasonings, then placed in the piping bag to get swirls followed by baking them on a pan. It's perfect for the holiday season, i used my cute ramekins to bake which turned out really well. Potatoes (boiled and mashed)-3 nos
Egg yolk-2 nos
Nutmeg- a pinch
Melted unsalted butter-1/4 cup
Water -As required
Preheat the oven to 375 degree F. Brush the ramekins with butter and place them aside. Take the mashed potatoes in a bowl and mix the rest of the ingredients except for paprika using an electric mixer until it is well incorporated. The mixture will be close to the consistency of a souffle. Fill three-fourths of the potatoes stuffing in the ramekins(sprinkle paprika on top of it ), place them in a pan filled with boiled water. Take care that two-third of the ramekins gets dissolved in the water. Bake it for one hour or until the potatoes turn golden brown. Serve it warm .
