Duchesse Potatoes -Merry Christmas & A Happy New Year !

Duchesse potatoes are basically mashed potatoes with different seasonings of your choice. The potatoes are normally boiled and mashed with the seasonings, then placed in the  piping bag  to get swirls followed by baking them on a pan. It's perfect  for the holiday season, i used my cute ramekins to bake which turned out really well. Enjoy this year's christmas with more holiday spirits , hope you all would have exchanged the gifts as well. Forget not to welcome the new year with lots of love and joy. Ingredients :

Potatoes (boiled and mashed)-3 nos
Egg-1 no
Egg yolk-2 nos
Nutmeg- a pinch
Melted unsalted butter-1/4 cup
Paprika-1/2 tsp
Salt-As required
Water -As required




Method :
Preheat the oven to 375 degree F. Brush the ramekins with butter and place them aside. Take the mashed potatoes in a bowl and mix the  rest of the ingredients except for paprika using an electric mixer until it is well incorporated. The mixture will be close to the consistency of a souffle. Fill three-fourths of the potatoes stuffing in the ramekins(sprinkle paprika on top of it ), place them in a pan  filled with boiled water. Take care that two-third of the ramekins gets dissolved in the water. Bake it for one hour or until the potatoes turn golden brown. Serve it warm .

Peanut Butter Thins Topped With Chocolate Gnash



Ingredients:

Peanut butter-1 cup
Egg-1 no
Confectionery sugar-3/4 cup
Chopped peanuts-2 tbs
Semi sweet chocolate-100 gms or approximately 4 oz
Water-1 tbs
Cream-2 tbs


Method:

Preheat the oven to 350 degree F. Place the parchment paper on the cookie pan. Mix together the peanut butter, sugar and the egg Refrigerate it to attain thick consistency to roll into a ball. Place the balls on the cookie pan, press the balls with a glass dipped in granulated sugar to 2" disk. Bake for about 10 minutes or until done Don't bake it for more than the time mentioned because it might get burnt. Let it cool.

Now for the chocolate gnash, combine the chocolate, cream and the water on the top of a double broiler. Heat it slowly, stir to smooth. Finally spoon the chocolate gnash onto each cookie sprinkle the chopped peanuts on it. Now its good to serve .
